加入鮮奶油的香氣更佳,也更好塑形,不過換成鮮奶也可以,只是塑形效果會差一點。 料理步驟將起司片切成5mm小碎塊,分成兩份,一份放入蛋液中,一份在煎蛋時下鍋。 取碗打入雞蛋,加入適量鹽,快速打勻再過篩,接著在蛋液裡加入鮮奶油、一半的起司塊混勻。 取不沾平底鍋,先倒入適量橄欖油,均勻覆蓋鍋面,再倒入多餘的油,接著放入30g奶油燒融,如此可以避免燒焦。 奶油大致融化後,轉中小火,攪拌一下蛋液避免沉澱,再將蛋液倒入鍋中,用筷子快速不斷繞圈攪拌,使雞蛋受熱均勻並產生滑嫩口感。 持續不斷攪拌,雞蛋會越來越成形,可以離火繼續攪拌避免加溫太快,再回到爐火上繼續攪拌,重複動作,雞蛋會慢慢變成綿密絲絨狀。 等到雞蛋轉為細緻綿密狀態(如圖),就停止攪拌,中央放入另一半起司塊,等待底部熟成平滑的蛋皮。 用筷子刮起底部蛋皮邊緣,可以翻起一側蛋包向內摺疊,可以隨自己的喜好輕壓邊緣、向內摺、等待一下下定型,塑成圓滑好看的形狀。 放入剩下20g奶油燒融,增添最後的奶香,並且使蛋包更好滑動,接著傾斜鍋面、輕輕甩動、敲動鍋子讓雞蛋滑下到鍋緣。 用筷子將蛋包另一側向內摺,等待一下定型。 接下來稍微向內甩一下鍋子,讓蛋包翻面(用筷子慢慢翻也可以),利用鍋緣的弧度輕壓塑形,即可盛盤。 示範影片來源:오픈키친
